We’ve recently shipped the ability to change the SharePoint Site URL associated with a Microsoft 365 Group (formerly Office 365 Group). https://www.microsoft.com/en-us/microsoft-365/roadmap?filters=&searchterms=56205. This can be done via the SharePoint Admin Center. The site URL can be changed on a per-site basis, but currently we don’t have plans to allow admins to change the global default from “/sites” to something different.

Would like the option to send email to the person who fills in the form and/or a set email address (like publisher or other mailbox). The first is usefull whem users subscribe to a workshop for instance by filling out the form. The second when the form is used permanently and the publisher or other mailbox needs to be informed upon submission.

You can already set al net groups sites te be created at the /teams managed path. This leaves /sites for the non-group SPO sites created from the admin centre. It's doesn't give you a lot of options but at least it's something.
