Ability to change the default icon that represents a Group or Distribution List
An admin should be able to change the default icon that Microsoft uses to represent a Group or Distribution list within Office 365 since others within that organization will see that icon.

I'd like the ability to add a symbol to represent the group i.e. school mascot/logo

the ability to change the default icon is not an option from either owa or admin portal. Do you have to be an owner to the Distribution List? wouldn't an admin had the ability to make this change? I have tried in the admin portal on both new look and classic look and does not provide me with this option, is there something else that needs to be implemented for this change?

I am a admin for our company, and I need the ability to decide and change the icon for the group that I create. Fix it!!

If you are a normal user and own a Group, you can change the Group picture if you open the Group in Outlook or OWA. In Outlook select your Group and in the menu click Edit Group and in the dialogue box where the Picture is Shown, click Edit. This will open OWA where you can change the Picture. If you open the Group in OWA directly, just hover over the Picture and click to edit.

If you are an Office Admin, go to the Administrator portal (the new portal experience), click on Groups > Groups, then select your Office 365 group or distribution list. This will show you a pane on the right hand side with the details of the group or distribution list, and here, you will see the letter-based icon and below it, a link called "Change". Click here to change the image.

I swear I was able to change the icon from the default letters to an actual picture. But now I can't?
